Congratulations to Lilly Marshall, Michelle Stanton, Angus Fellows, and Cameron White for participating in the YES Chef Program at The Crystalbrook Kingsley Hotel. This culminated in an amazing initiative from the Regional Industry Education Pathways (RIEP) called "Yes Chef" Service Day.
After 4 weeks of intense training, preparation, and workplace visits, a team of 11 local hospitality students dazzled 90 guests with a 3-course fine dining experience at Newcastle’s only 5-star hotel, The Round House. Mrs Googe, Ms Kirk, Mrs Hirst and Mr Watson all got to experience the amazing dishes that they plated up.
Menu Highlights
Entrée: Seared scallops, cauliflower purée, curry leaf butter, pickled ginger.
Main: Pan-roasted duck breast, beetroot, fig, red wine jus.
Dessert: Banana pudding, vanilla cream, miso caramel sauce.
Gus Maher, Director of the Hunter Culinary Association, praised the meal and said he would happily pay $150 for it!
Next, our talented students will be interviewed for one of three Apprenticeships at Crystalbrook and other exciting opportunities with the Hunter Culinary Association.
